XYZ Wine

“Wine can of their wits the wise beguile,
make the sage frolic, and the serious smile.”

                                   Homer

At XYZ Restaurant we are proud to present our Wine Spectator “Best of Award of Excellence,” wine list.  With over 600 selections, we offer an extensive selection of both Domestic (California, Oregon, and Washington) and French wines.  We also offer a well-chosen selection of wines from Germany, Austria, Italy, Spain, Australia, and New Zealand with an extensive selection of dessert wines.  In choosing our wines, we work very hard to make selections that are both true to their varietal and true to their place of origin.  In this way, when one chooses a wine that is perhaps less familiar, one can expect that this wine tastes “as it should.”  Our hope is that this will entice you to try wines that perhaps you have never tried before with the added encouragement that many of these wines represent some of the finest examples of wines from their respective regions from some of the regions’ top producers.  Often times, because of their relative obscurity, these wines also represent great value.

Throughout the wine list you will also find notations for producers who are either making wines according to organic/sustainable farming principles or biodynamic principles.  The first group represents producers who avoid using herbicides and pesticides in the grape growing process and search for more “earth-friendly” practices that work in harmony with nature in the production of their wines.  The second group represents producers who go beyond organic farming by literally turning their vineyards into self-sustaining and self-contained microclimates.  The originality of biodynamic agriculture is based on three key points:  (1) Nourishing the soil by adding living matter…allowing the earth to “heal itself;”  (2) Opening the soils and vines to cosmic influences, by working the soils according to precise cycles of the earth;  and (3) by respecting the food chain from soil microorganisms to vine insect predators…respecting the environment by the use of plants (nettles, chamomile, oak bark, etc.) and rock powders to keep the entire microclimate in good health.  Winemakers who are making these commitments to the environment and their wines should be applauded. The results speak for themselves as wines from these groups are always unique and are often some of the best and most interesting wines made in the world.

We hope our wine list adds to your dining experience at XYZ.  Please do not hesitate to ask if you have questions about any particular wines or wine regions on the list.  Santé!
